No Bake Cookie Dough Balls

This recipe is not only tasty but it's also very simple! I hope you enjoy these as much as I did! 


Ingredients:
 1 scoop cellucor s'mores protein
 1/4 cup wheat flour
 1 tsp vanilla extract
 1 tsp stevia leaf drops
 1/2 cup white chocolate Justin's almond butter with a little bit of trader Joe's cookies and cream butter mixed in
 1 tsp cinnamon
 1/4 cup white chocolate chips

Directions: 
Mix all ingredients together except white chocolate chips. You may need to add a little bit (add in very small amounts!) of water as needed as you work the dough because it can be dry. Last add the white chocolate chips and work them in the dough. Then pull out pieces of the dough to makes small balls, place on a cookie sheet and stick in the fridge for a bit. Makes 8 balls

Raw, No Bake, Energy Bites

No Bake Energy Bites 

I love these delicious treats for several reasons... 
1. They are easy to make 
2. They are guilt-free 
3. They are the perfect treat if you need a little snack or tasty dessert 
4.  They are portable 
5. The ingredients are delicious 

so lets get started! 

I made a huge batch because I had some almond butter I was trying to get rid of but you can alter the recipe amount if you want to make less energy bites (but lets be real, you will need/want quite a few) Just make sure the texture is gooey enough for everything to stick, but not so gooey that you can't form a ball out of the mix. 

Ingredients: 
3 cups of almond butter 
2 cups of gluten-free oatmeal (uncooked) 
1/2 cup of sunflower seeds 
1 cup of shredded unsweetened coconut flakes 
2 cups of coconut nectar (you can find this at whole foods) OR use raw honey 
lots of cinnamon 
3 tbsp of natural vanilla 
1 tsp of salt 

Directions: 
Pour all DRY ingredients in a large mixing bowl and mix thoroughly. 
Then, slowly pour in coconut nectar while stirring.  
Mix coconut nectar in with dry ingredients as best as you can. 
Then, add in the almond butter and mix until all ingredients are mixed thoroughly (I used my clean hands to do this) 
Once everything is well mixed, start spooning the mixture out onto some parchment paper.  
Just like making homemade cookies, you will roll the batter into little balls. 
Once all of your batter is made into little balls, you can place them in fridge or serve immediately. 
I like to keep them in the fridge because I like them slightly chilled! 



p.s. these can also serve as a great side dish to bring over the holidays!

Pumpkin Pie Pancakes: Paleo-Friendly Gluten-Free


Ahh fall festivities!!! I could eat these all day, every day! These are so yummy... perfect for those cozy fall mornings.  The good news is... you wont have to feel guilty after eating them! 

Ingredients:
  • 4 large eggs 
  • 4 large egg whites 
  • 1 cup of canned pumpkin 
  • 1/2 cup of almond or coconut flour 
  • 1 teaspoon of baking powder 
  • 1 teaspoon vanilla 
  • 1/2 teaspoon of nutmeg 
  • two tablespoons of coconut oil 
You can top with chopped nuts or dried fruits.   Walden Farms has a great Zero Calorie syrup!

Homemade Pumpkin Pie LauraBars



 All hail the pumpkin season!!! I love this time of year so incredibly much! I enjoy as much pumpkin recipes as I can during this time of year!  However, this year I am working on healthy alternatives to all the pumpkin treats I love! I have been dying to make homemade laura bars because these babies are so darn expensive! Surprisingly, these were very easy to make and tasted uuhhh-mazing! (plus they were cheaper than buying them in stores!) Win Win!

Ingredients:
  • 1  cup (pitted) Medjool Dates
  • ½ cup Raisins
  • 1 1/2 cups Almonds
  • 3 tablespoons of dried Cranberries 
  • 3 tablespoons Pumpkin Puree
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Cinnamon
  • 1 teaspoon of Traders Joe's Pumpkin Spice 

Directions:
  1. Begin by chopping your almonds into small bits. I used a nutribullet which took me forever so i recommend a food processor, be careful not to cream the nuts just chop them. Remove the nut mixture and set aside.
  2. Then mix, dates, raisins, pumpkin puree, nutmeg, pumpkin spice, and cinnamon. Combine until it creates a very sticky texture. Again, it took me awhile to do this in my nutribullet.  I had to do small portions at time but I got it. 
  3. Remove the mixture from the processor, place in a large mixing bowl and fold in the chopped Almonds.
  4. Place final mixture in a flat pan and let set over night.
  5. Cut bars to the size of your liking and Enjoy!

Paleo Pumpkin Bread by Ashley

Paleo Pumpkin Bread

Last night I was having some major cravings so instead of caving in and cheating I decided to channel in the fall and make some clean and healthy pumpkin bread that is paleo friendly.  Guilt-free food that makes me feel like I'm cheating is always a win in my book! Not to mention, this recipe was so easy that I whipped up another batch so we could have some handy all week long!
 
Prep Time: 5 minutes 
Cook Time: 45 minutes 
 I bought most of my ingredients at Trader Joe's.

Ingredients: 
2 cups of almond flour
3/4 teaspoon of baking soda 
1-3 teaspoons of cinnamon (depending on how much you like cinnamon) 
1 teaspoon of Nutmeg 
1 teaspoon of ground ginger 
1/2 teaspoon of salt 
1/2 cup of organic pumpkin puree 
1/2 cup of agave or raw honey 
2 eggs (could also use egg whites) 

Additional mix in's: 
Cranberries
Raisins  
Walnuts 
Pecans 
 Directions: 
Preheat oven to 350.  
Gather all ingredients and pour into one mixing bowl. 
 Mix everything together until there are no clumps and no dry ingredients 
Spray your 5x9 pan with coconut oil spray. 
Pour ingredients into pan 
Place in oven for at least 40 minutes... depending on how moist you like your bread you could leave it in for another 5 minutes.


The first loaf I made was gone within in minutes! Needless to say, its delicious!
