Raw, No Bake, Energy Bites

No Bake Energy Bites 

I love these delicious treats for several reasons... 
1. They are easy to make 
2. They are guilt-free 
3. They are the perfect treat if you need a little snack or tasty dessert 
4.  They are portable 
5. The ingredients are delicious 

so lets get started! 

I made a huge batch because I had some almond butter I was trying to get rid of but you can alter the recipe amount if you want to make less energy bites (but lets be real, you will need/want quite a few) Just make sure the texture is gooey enough for everything to stick, but not so gooey that you can't form a ball out of the mix. 

Ingredients: 
3 cups of almond butter 
2 cups of gluten-free oatmeal (uncooked) 
1/2 cup of sunflower seeds 
1 cup of shredded unsweetened coconut flakes 
2 cups of coconut nectar (you can find this at whole foods) OR use raw honey 
lots of cinnamon 
3 tbsp of natural vanilla 
1 tsp of salt 

Directions: 
Pour all DRY ingredients in a large mixing bowl and mix thoroughly. 
Then, slowly pour in coconut nectar while stirring.  
Mix coconut nectar in with dry ingredients as best as you can. 
Then, add in the almond butter and mix until all ingredients are mixed thoroughly (I used my clean hands to do this) 
Once everything is well mixed, start spooning the mixture out onto some parchment paper.  
Just like making homemade cookies, you will roll the batter into little balls. 
Once all of your batter is made into little balls, you can place them in fridge or serve immediately. 
I like to keep them in the fridge because I like them slightly chilled! 



p.s. these can also serve as a great side dish to bring over the holidays!

Cheesy Cauliflower Breadsticks by Katie


I think it's safe to say the name of this recipe speaks for itself... Deeelishh! 

Ingredients: 
1 cauliflower
 1 egg
 1/2 cup mozzarella
1 tbsp olive oil 
2 cloves garlic
 1/2 tsp Italian herbs 
1/2 tsp sea salt
 1/2 tsp pepper
Toppings are additional mozzarella and italian herbs.
Directions: 
 Pre heat oven to 350 then chop cauliflower into small pieces or use food processor to rice the cauliflower. Cook in microwave for 8 minutes then make sure to dry the cauliflower out in a clean towel, it must be dry!! Next mince your garlic and add your garlic and olive oil to a pan and simmer it until fragrant (only a minute or two) in a mixing bowl mix cauliflower, oil, egg, cheese and seasoning and mix well. Take a loaf pan and spray it with cooking spray and line your mixture in the bottom evenly. Bake in the oven for 25-35 minutes or until golden brown. You can serve these with marinara or I served mine with bolthouse farms yogurt ranch! Makes about 8-10 breadsticks

Low Carb Pasta Alternative by Katie

Love pasta but hate the calorie and carb overload? We have two words for you... 

Spaghetti Squash.

This miracle of a veggie is a life saver!  We have all have comfort food craving and spaghetti squash will soon be your new BFF. 

Low carb pasta alternative

Ingredients: 
3 oz extra lean ground turkey, one spaghetti squash, 1 tbsp light butter, garlic powder, diced onion, salt and pepper
 
First preheat your over to 400 degrees. Slice your spaghetti squash in half and scoop out the seeds (I saved mine to roast for later with light butter, cinnamon and stevia). 
When the oven is ready place squash open side down in a glass baking pan. Add just enough water to line the bottom of the pan. 
Bake for about 30-40 minutes. Then prep your turkey and season with garlic and onion. Place ground turkey in skillet on low-medium heat and break it up with a fork as it's cooking. Salt and pepper as needed. 
When your squash is done a fork should easily pierce the inside all the way to the skin. Then take a fork and use it to shred the inside of the squash (it should easily fall apart into little spaghetti squash noodles!) a small squash makes about four cups and I usually eat 1-2 cups. 
Then add a tbsp of light butter salt and pepper and your ground turkey! You can also add different low cal pasta sauces!


1 Cup of Spaghetti Squash is 42 calories and 10 carbs!

Breakfast Burrito Under 400 Calories By Katie

Did you know that the breakfast burritos that we all love so much are typically around 900 calories, if not more! Unless it's our cheat day, we just cant do that! Therefore we came up with a breakfast burrito that delivers the same taste but with half the calories... #winning 

Quick and Healthy Breakfast Burrito 

Ingredients: 
1 Egg 
2 Egg Whites 
4 TBS of Red Chili Sauce (I used Casa De Benavidez it's my fav) 
1 Low Carb Tortilla
1/4  cup of fat free cheddar
2 Jennie O Turkey Breakfast Turkey Links 


How to: 

Scramble eggs in a small pan while frying the sausage links in another small pan.  Fry the sausage until the pink is gone. 
Place Eggs and sausage on an open tortilla.  
Sprinkle Cheese on top of the hot eggs and sausage. 
Heat up the red chili sauce and drizzle over the cheese. 
 Roll up the tortilla and warm the whole burrito for about 30 seconds in the microwave 
& Enjoy!!!

Pumpkin Pie Pancakes: Paleo-Friendly Gluten-Free


Ahh fall festivities!!! I could eat these all day, every day! These are so yummy... perfect for those cozy fall mornings.  The good news is... you wont have to feel guilty after eating them! 

Ingredients:
  • 4 large eggs 
  • 4 large egg whites 
  • 1 cup of canned pumpkin 
  • 1/2 cup of almond or coconut flour 
  • 1 teaspoon of baking powder 
  • 1 teaspoon vanilla 
  • 1/2 teaspoon of nutmeg 
  • two tablespoons of coconut oil 
You can top with chopped nuts or dried fruits.   Walden Farms has a great Zero Calorie syrup!

Chocolate Banana Bites by Katie


What You'll Need: 

1 large banana 
1/2 cup of dark chocolate chips 
1 tbsp all PB 
8 tooth picks 

What To Do:  

  • Cut banana into 16 pieces 
  • Spread PB between to make 8 bites 
  • Melt dark chocolate for 45 seconds in the microwave and stir 
  • Microwave for additional 10 seconds as needed 
  • Put tooth picks in bites to hold banana pieces together and dip in dark chocolate 
  • Place on plate and freeze for a few hours { or as long as you can wait ;) }
  • And enjoy! 


Makes about 8 bites.  2 bites is about 145 calories. 

For those of you who don't know what PB is, it is a powdered form of peanut butter that at 85% less fat and is only 45 calories per serving.  It is a great alternative to regular peanut butter and tastes just as good! You can find it at Wal-Mart and most other grocery stores.
