Detoxing Quinoa Salad

I love this recipe because not only does it have detoxing properties in it, but it is also delicious and most importantly, it's filling! 


Ingredients: 
1 cup of quinoa 
2 cups of vegetable broth 
1 cup of chopped carrots 
1 can of black beans 
1 cup of mini sweet bell peppers, seeded, and chopped 
1 cup of cherry tomatoes cut in half 
5 tablespoons of parsley 
5 tabplespoons of green onion 
1 cup of red onion 
salt and pepper 
1 tablespoon of minced garlic 
3 tablespoons of lime juice 
grapeseed oil, olive oil, balsamic vinegar


Directions: 
Follow package instructions for quinoa.  Sub water for vegetable broth.  
meanwhile, chop carrots, peppers, and the red onion and cook on stove top with a little bit of olive oil and minced garlic. 
Once soft, mix in black beans, green onion, lime juice, salt, pepper.  
Once cooked, mix in the quinoa and stir.  
Then, add in the parsley and tomatoes at the end.  
You may not need the balsamic but if you want a little more taste, go ahead and drizzle with balsamic. 
Season to taste!

Lemon Basil Pesto Dressing

This recipe is Dairy-Free, Soy-Free, & Gluten-Free 

Many salad dressings are filled with trans fat, sugar, preservatives, and artificial flavors.  Unfortunately this can cancel out every intention we had with choosing a leafy green salad. #Bummer
Making your own fresh, organic, salad dressings is not only fun but it is also a way for you to sneak in some beautiful fruits and veggies into your diet.  Ditch those chemicals and preservatives! 

Lemon Basil Pesto Dressing 

Ingredients: 
2-3 Cups of fresh basil leaves 
1-2 fresh squeezed lemon (depending on how much lemon you like)
3 tbs of Coconut Oil 
3 tbs of Minced Garlic 
2/3 cups of Pine Nuts 
Sea Salt 
Black Pepper 

Directions: 
Place all ingredients in a blender until everything is smooth! 

I like to double up this recipe and keep it in a mason jar for the week.  It's absolutely delicious!

Creamy Avocado Dressing & Dip

Many salad dressings are filled with trans fat, sugar, preservatives, and artificial flavors.  Unfortunately this basically cancels out every intention we had with choosing a leafy green salad.
Making your own fresh, organic, salad dressings is not only fun but it is also a way for you to sneak in some beautiful fruits and veggies into your diet.  


This is one of my favorites! It's Dairy-Free, Soy-Free, Gluten-Free, and Oil-Free #Winning


Ingredients: 

1 Avocado 
1 Tbsp of Minced Garlic 
2 Tsp of Raw Organic Honey 
1/4 Cup of Water 
1 Tsp of Sea Salt 
1 Fresh Squeezed Lemon 
1-2 Tbsp of Dill 
1 Tsp of Cayenne Pepper 
1 Tsp of Crushed Black Pepper 

Directions: 
Place all ingredients in blender and top on your favorite salad or you can also use it to dip your veggies in :)
